Miller’s Meat Market is excited to welcome another local business into our store, well… on the porch that is. Now outside our front door you can find a display of locally grown lavender, don’t walk by without smelling the beautiful and natural lavender scent, then grab a bundle for your home! This blog is going to be introducing the Hopenhagen Farm, and telling you all a little bit about their local business. We love incorporating local goods into our store, and we hope you are just as excited about our new product as we are!

Meet Mary and DeVere Rumble!

Hopenhagen Farm began when Mary and DeVere Rumble were searching for something to do occupy their retirement years. In the Spring of 2014, with a collection of useful knowledge and a lot of physical labor, the Rumbles successfully planted Cascade and Newport hops. Hops are the flowers of the hop plant Hamulus lupulus, a member of the Cannabaceae family of flowering plants. They are used primarily as a bitter flavoring, and a stability agent in beer. In addition to bitterness, they also impart floral, fruity, or citrus flavors and aromas. Once they had a steady hop harvest, Hopenhagen Farm became a reality. In 2016, the decision was made to slightly expand the farm, and they began growing lavender. To date the farm has 1800 Phenomenal, Munstead, Big Blue, Edelweiss, Melissa Lilac, Provence, Super Blue, Sensational and Hidcote lavender species being grown on the farms property. In May of 2017, the farm opened a specialty store which highlights mostly hop and lavender products. The store keeps a forever evolving product line of soaps, essential oils, lotions, candles, and they have even created a line of pet supplies and a products for children. Despite this beautifully smelling herb being a go-to for healing and calming, lavender is not only used for health and wellness items. The Hopenhagen store also carries tasty products such as lavender chocolate, ice-cream, and other culinary seasonings. The Rumbles have also have lavender wine which they created in conjunction with the local Tug Hill Vineyards, and they have made coffee in partnership with Tug Hill Artisan Roasters. This couple has a passion for local business just like we do here at Miller’s Meat Market. Hopenhagen Farms have some of their products being sold in high-traffic areas, some examples being The Taste of NY Store, Burrville Cider Mill, and The State Street Market. Mary Rumble explained to me that “Every year they seem to get a little bit bigger.” In 2018, they Rumbles completed a 20-C kitchen and opened their “Tea Room”. The 20-C kitchen enables the farm to dry their own lavender as culinary. Culinary lavender needs to be dried in an inspected kitchen, so this kitchen has really allowed to Hopenhagen Farm to do even more with the lavender they grow. The “Tea Room” is a beautiful room that can be rented and reserved for events and tea parties. It has been a great addition to the business, and is utilized frequently for all sorts of gatherings. In October of 2018, Hopenhagen became a participant of New York Grown and Certified, they are also a part of Lewis County Cuisine Trail, and a member of Adirondack Harvest. This summer of 2021, they began distilling their own lavender for essential oils and hydrosol on site! The progress this business has had from the start in 2014 is incredible, and they continue to grow their local presence.

The Hopenhagen Farm is well-known for this Lavender Festival that happens annually. At this festival the farm welcomes over 70 food and craft vendors to join them in selling local products, there is live music all day, and it is a special day of “you cut” lavender where you get to cut that lavender for yourself! The festival sounds like a super fun experience so be sure to keep a look out for it next year! The farm also hosts yoga sessions in the lavender fields, so check out their Facebook page for more information on that. Lavender is used for stress relief, calming and anxiety. So what better place to try yoga!?

I had a great time chatting with Mary and DeVere, and learning more about the hop and lavender farm so that I could share some interesting information with you all! Apple Cider Grilled Pork Chops

I know I can’t be the only one who is just ecstatic for the upcoming Fall season! One specific reason that Fall is my favorite time of year is all the wonder flavors that come with the season! Fall recipes are the best! There are so autumn flavors to tap into, and the seasonal treat that is always at the top of my list has got to be apple cider, hands down! Using the strong apple flavor in all recipes from sweet to savory makes any dish delicious. This recipe I’m sharing with you couldn’t be more perfect for this time of year! We still have some nice nights for grilling, however they are winding down so try this recipe before it gets too chilly to use your grill! Apple cider grilled pork chops?! It does not get much better than that, and Miller’s Meat Market can help you get what you need for this recipe. We now have pork chops on sale, order now so you can try this new recipe for dinner! Here are the ingredients you need to prepare this delicious dish.

Of course start with 1 - 1 1/2 lbs boneless pork chops. You can get these here at Miller’s Meat Market! Keep our bulk price in mind!

  • SPICE RUB:

  • 2 Tbsp brown sugar

  • 2 tsp chili powder

  • 1 tsp garlic powder

  • 1 tsp salt

  • 1 tsp fresh thyme minced (can substitute 1/4-1/2 tsp dried thyme)

  • 1/2 tsp pepper

  • 1 Tbsp olive oil

  • CIDER GLAZE:

  • 1 1/2 cups apple cider - Try the Burrville Cider we carry here at Miller’s!

  • 1/4 cup maple syrup - We have local maple syrup on our shelves as well!

  • 1 Tbsp grainy Dijon mustard

  • 2 tsp orange zest

  • 1/2 tsp crushed red pepper flakes

  • 1/2 tsp salt

Now follow these directions to perfectly make these porkchops! Is your mouth watering yet thinking about those delicious fall flavors? Maple syrup and apple cider, I don’t think you can go wrong!! You begin this recipe by combining all of the cider glaze ingredients into a small saucepan, and whisking to combine all the components. Keep the glaze over the heat and bring it to a low boil, once this step is achieved reduce the heat to LOW and let the glaze simmer. Now it is time to preheat your grill to medium/medium -high heat. Then add all the spice rub ingredients to a small bowl and stir to combine, the mixture should start to resemble a dry paste. Next, take your dry pork chops and rub each one with the spice rub mixture, be sure to really massage it into the meat for the best results in flavor. Once the grill is hot, place your chops on the grill. Brush each chop with the sauce that has been simmering, and grill for about 4 minutes or so. Then flip each piece of meat over, and brush that side with your cider glaze. Grill that side for approximately 4 minutes as well. Continue to generously brush the chops with the glaze as they cook, and once they are cooked remove them form the grill and to a plate to rest for a few minutes. Finish your dish by drizzling the chops with the remaining sauce and sprinkle with fresh thyme before serving.

Now THAT is the perfect September meal!

School Lunch Ideas!

I am really hoping everyone has a great transition back into a new school year! The best way to make it through a long school day is to be properly nourished, weather it is a cafeteria lunch or a packed lunch from home! We are here to tell you all the ways we can help you with packed lunches! We have a few ideas to share with you, so that you can provide a delicious and nourishing lunch for your student. Let’s get into what I have in mind!

The most typical sack lunch contains a sandwich of some sort, right?! Well we have you covered when it comes to fresh and delicious sandwich meat! Weekly we smoke turkey, pork, and beef that gets cooked to perfection, sliced in a thin way that is perfect for deli sandwiches, and packaged for us to sell in our retail store. Our smoked turkey breast, sandwich pork loin, and roast beef would make delicious sandwiches for any age, good fresh meat filled with flavor! However, if you are looking to stray away from this normal lunch option, our deli meat can be used in other delicious ways! Meat and cheese roll ups are the perfect way to fill your young students lunch. It is such an easy snack to prepare, but is filling and super yummy! Just choose your favorite kind of deli meat and your favorite kind of cheese. We have a very wide selection of cheese right here at Miller’s Meat Market! Thinly slice your cheese, and lay one slice of cheese on a singular piece of sandwich meat. Roll it up and pack a few roll ups in your child’s lunch! A great no mess treat that is different than the typical lunch time sandwich!

To continue on with the meat and cheese theme, we have so many options for you to send you child with a great meat, cheese, and cracker combo for lunch. We have multiple cracker options in the grocery section of our store, and again many different kinds of cheese. Once you have these two items, decide on the meat you think your child would like best! We have ring bologna, pepperjack bologna, summer sausage, and so much more! We also have a very large selection of snack sticks, what a nice lunch time treat! Pack your little students lunch with a baggie of crackers, bite sized slices of meat and cheese, and there you go! A lunch that would make any child smile! You can’t go wrong with meat, cheese, and crackers!

If you are looking for something a little more homemade and filling for lunch, we also sell a large variety of pre-made sides that would work perfect for taking in your lunch. We carry homemade pulled pork, homestyle pistachio salad, cottage cheese jello salad, mandarin orange salad and 3 bean salad. The list doesn’t even end there! Some customer favorites include our pasta salad, bowtie antipasto salad, potato salad, and baked beans! Visit us any time and pick up a portioned container for your packed lunch! Each of these sides are delicious and very popular in our retail store! We also have a drink cooler so that you can pick up a drink for your child to stay hydrated. We have local milk options, juice, and for the fall season we will be carrying Burrville cider. Lastly, what lunch is complete without dessert!? We have a selection of cookies that work great for packed lunches, as well as mini loafs of sweet breads that can be sliced to the perfect lunch size. This blog has been so much fun to write! Meet Kiersten!

In honor of school starting back up again, I wanted to introduce our teacher on staff! Kiersten Lehman joins our team here at Miller’s Meat Market during the summer months to take charge of the bakery. However, now that the new school year is starting, we unfortunately have to say our goodbyes to Kiersten as she is starting her teaching career this year as a second grade teacher at Beaver River Central School. I thought it would be fun to interview Kiersten about her time at Miller’s before she starts her new job in the school system. It is never fun to say goodbye to a co-worker, but we are so excited that Kiersten is pursing her dream to be a teacher!

As I already stated, Kiersten becomes the head of the bakery when she comes back to help us in the summer. This was her 4th summer at Miller’s, her first being the summer between her freshman and sophomore year of college, so by now she has a great understanding of what needs to get done and how to do things right. She attended college and graduated from Roberts Wesleyan, and Kiersten needed a job to continue paying off the costs of her schooling. She already knew many of the Miller’s employees because they are a part of her church family, so joining the staff was easy and smooth. The people she works with continue to be the reason she enjoys her time at Miller’s, and everyone who works with Kiersten appreciates everything she does very much. She spends her day busily working on tasks such as making the side salads we sell in the store, keeping the bakery organized, pricing bakery items, and of course baking all the delicious treats we have for sale. Out of all the important jobs she has, Kiersten told me that baking cakes has to be her favorite. Kiersten has always just been a summer helper, except for last year when the Covid-19 virus changed her plans. When schools shut down in March of 2020, Kiersten was of course stripped the opportunity to work as a substitute teacher. She then joined us to work a little earlier than she normally would, and helped us through the Covid craziness from March until school started back up again in September. This past school year Kiersten got the opportunity to work in a 9 month long substitute teacher position, but this September marks the official beginning of her career, in her own classroom, with her own group of second grade students. Kiersten explained to me a few of the things she has learned while working at Miller’s, some of those things being time management, how to properly prioritize tasks, and how to successfully plan out a day of work. All of these small lessons will surely help her as she begins the life of a full time teacher.

Outside of work in the school system, and her summer job at Miller’s, Kiersten enjoys spending time with her family and friends. She loves to hangout with the special people in her life, as well as watch movies and go out to eat. Currently, her favorite movie is “The Greatest Showman”, and her favorite place to eat out is Stephanos! There are so many great things about Kiersten that will make her an amazing teacher. She has a fun personality, and a kind spirit with a passion for teaching. All of us here at Miller’s Meat Market are sad that we won’t have her in the bakery anymore, but we are overjoyed that she has an opportunity to do what she truly loves. We want to wish her the best of luck in her first official school year. When talking to Kiersten in preparation for this write-up I asked her how long she knew she wanted to be a teacher. Her response to me was that ever since she was 7, and a second grader herself, she always dreamed of being a 2nd grade teacher. What a blessing it is to have that dream come true. If you have a second grader headed to Beaver River elementary school this year, maybe they will be luck enough to have Miss. Lehman as their teacher!

Venison Swaps

Deer season may seem a little far off to some people, but here at Miller’s Meat Market we know it is never too early to start preparing! Depending on how much luck you had during the last hunting season, you may still have a venison filled freezer with no room for this falls success! It is the time of year where hunters begin to clear out the freezers in preparation for deer season, but what are you supposed to do with last years meat? We conduct a service to our customers that allows you to bring us your clean and good quality venison and leave the same day with our specialty venison products, and I’m here to explain how it works!

In the past we have found that there is some confusion surrounding this service that we offer. My goal is to clarify what our “swap” really means, and help everyone understand how the process works. This is an extremely popular feature of our business, one that provides extra convenience and less hassle to our customers. We have hunters that are loyal to us even though they live quite a distance away. Some individuals come from three plus hours away with their deer meat and are thankful that they can leave that day with freshly made venison product and can avoid another day long trip. When customers come in looking to partake in a venison swap, the first thing we do it weigh up the meat that they bring. As we transfer their meat into our clean lugs, we look over the meat to make sure it is all venison. If there is different kinds of meat, freezer burnt meat, or anything else that looks questionable we do not include that in the weighed amount and the customer can either take that back home with them or we can dispose of it upon the customers request. Once we have a final weight, we take the customer to our computer where we enter their information and the amount of venison they brought us. We then proceed to take their order. Once we know what product the customer is looking for, we go into our freezer and gather the correct number of items and bring them out to the customer. Unfortunately, if you catch us on a day where we do not have the item you are looking for then a return trip would be necessary to get the product you want, or we can work with you to find something we have in stock that you would still enjoy! Once we have your order filled, we will cash you out. Venison swaps are done in “batches”, and you are charged per batch of product that you get. If you get a deer processed here at Miller’s, all specialty items are an additional price and this additional fee is all you pay when you swap meat for specialty products. This is not a cutting or processing fee, because you brought us your own meat. This price comes from the added ingredients to all the specialty items, the vacuum packing of the items, and of course the work it takes to make them. Often times batches of venison product require less product then you will yield, so you would most likely be taking home a higher weight amount of meat that what you brought us. If you are interested in learning more about the products you can get and their prices, click the link below. It will take you to our venison cutting page, where you can find lists of the custom venison products we offer. Only a select few of these products are available for retail purchase. The majority of these products are only available to be made in our custom shop, which means you must bring in meat to swap or have a deer processed here to get them. The venison products we do sell in the store are made with venison we purchase from our suppliers so that we can sell it. The store products are NOT made with any venison that is killed by a customer, and is kept very sperate from the custom shop products.

Even once the swap is finished, the meat brought in by customers does not automatically get made into product. We have one employee that sees every ounce of meat that comes in, inspecting all of it and deciding if it is up to our standard and good enough to be made into our product. Questionable meat gets thrown away, and only good looking venison moves forward in the product making process. We understand that you may take time to perfectly clean your meat to the highest standard you can, and it can be difficult to exchange that for meat that wasn’t cleaned by your own hands. However, we work hard to keep all our product top notch, and make sure we only present you with healthy products that we enjoy without any hesitation. I would like to reiterate one more time just to make sure everything is clear, you may only bring in venison to swap for venison products. This can be venison stew meat, venison roasts, venison steaks, or venison ground meat without additives. We do not provide this service for beef, pork, or chicken. You also do not get the product free of charge because you brought in meat, there is still a price to be paid when you are doing a swap. We really wanted to do this write up before we entered the busiest part of deer season, so that you all can empty your freezers with full understanding of our swap process. A popular rub we would recommend for your sirloin steak would be our Jerked Brine. This rub has a brown sugar base giving the meat a sweet flavor, but also a black pepper kick to follow the sweetness in each bite. We sell jerked beef in our store, but now you can purchase your sirloin steak at a great bulk price and season it how you wish at home! Our second Miller’s Meat Market seasoning is known as Watson sand. This rub is perfect for every kind of meat, and even other foods like eggs and vegetables. The Creepy Hollow Sandwich!

A Creepy Hollow sandwich? Sounds interesting, doesn’t it!?

This recipe was developed and named on a Miller family camping trip, and continues to be one of their favorite midnight summer meals. The sandwich was named at our local campgrounds, Happy Hollow! Happy Hollow is a wonderful place to spend time with your family and enjoy those bright summer days that are always followed with warm evenings that can be spent snacking around the camp fire. But what’s the best thing to snack on is the question at hand. Well, Darrell recommends and introduces the Creepy Hollow Sandwich to you all!

One evening at Happy Hollow camp grounds, this specialty sandwich was being prepared. That same weekend, one of the friends accompanying the Miller’s on their camping weekend revealed that they had the campgrounds name wrong all along. This fellow had thought that they were camping at “Creepy Hollow”… soon after he was corrected that this was not a creepy place to camp, but a family-friendly, pleasant, and perfectly HAPPY place. From that weekend forward the sandwich was titled Creepy Hollow. By now you’re probably wondering, what is this sandwich?

Well allow me to explain.

The sandwich is a high stack of savory goodness, and will fulfil any late night campfire cravings.

Here is what you need!

The Creepy Hollow:

Bread

Thinly sliced Ribeye Steak - (currently $19.99/lb at Miller’s Meat Market)

Bacon - ($6.99/lb at Miller’s Meat Market)

A1 Sauce

Lettuce

Tomato

Onion

Cheese

Pretty simple ingredients that combine together and make a delicious sandwich. Once you have your sliced steak cooked to perfection, and your bacon has been cooked to a crisp over the campfire, you begin to assemble. Pile your bacon and steak onto a hamburger bun, or use some toasted bread. Once you have all the meat you desire on your sandwich, continue adding flavor by letting cheese melt over the steak and bacon, then add onion, lettuce, and tomato to your liking. Once you have your stack of fresh flavor, you can’t forget to tie the whole thing together with A1 steak sauce. Juicy steak paired with bacon and other summertime flavors, doesn’t that sound delicious!? Surely nothing is more amazing than that combination, and if you prepare it around a fire with the ones you love it’s bound to be ten times better!

Well there you have it, a new summer night craving cure!

Clams - Tomato Broth & Garlic Mayo

Summer cookouts have to be one of my favorite things in the world. It is so special to be in a large group with people you care about, and spending time with one another! There are so many different options for on you cookout menu! Chicken, steak, kabobs, hotdogs & hamburgers, but the list doesn’t end there, not even close! This summer try something a little different, and enjoy some delicious clams with your friends and family! I think clams are such a fun option, they can be made in so many different ways and be enjoyed in between visiting with those around you. If you aren’t sure how to use clams in a tasty way, I have you covered, here is a new delicious way to prepare clams! At Miller’s Meat Market you can purchase 100 clams for $70, or if you are having a large get-together you can get 200 clams for $115. This recipe is pulled from the bonappetit website, and if you would prefer to read this recipe directly from that site there is a link below! Here is what you’ll need for this tasty dish.

Ingredients:

½ lemon

5 garlic cloves, 1 whole, 4 thinly sliced

1/2 cup mayonnaise

Kosher salt

1/4 cup plus 3 Tbsp. extra-virgin olive oil

2 large shallots, thinly sliced

½ tsp. crushed red pepper flakes

2 Tbsp. tomato paste

2 cups cherry tomatoes

1 cup dry white wine

36 clams, scrubbed

6 Tbsp. unsalted butter, cut into pieces

3 Tbsp. finely chopped chives

4 thick slices country-style bread

1.) Prepare a grill for medium heat. Finely grate zest from lemon half into a small bowl, then squeeze in juice. Finely grate the garlic clove that was left whole into bowl and mix in mayonnaise. Season garlic mayo with salt and set aside.

2.) Place a large cast-iron skillet on grill and heat ¼ cup oil in skillet. Add the sliced garlic, shallots, and chile and cook, stirring often, until just softened, about 2 minutes. Add tomato paste and cook, stirring often, until paste darkens slightly, this should take about 1 minute. Add tomatoes and a pinch of salt and cook, still stirring occasionally, until tomatoes soften and release their juices, this should take about 4 minutes. Add wine and cook until it is almost reduced by half and no longer smells of alcohol, this should take about 3 minutes.

3.) Add clams and butter to skillet and cover (if you don’t have a lid that fits, use a sheet of foil). Cook until clams have opened, 6–10 minutes, depending on size of clams and heat level. Remove skillet from grill; discard any clams that don’t open. Sprinkle with chives.

4.) Meanwhile, drizzle bread with remaining 3 Tbsp. oil and season lightly with salt. Grill until golden brown and crisp, about 3 minutes per side.

5.) Serve clams with toasted bread and reserved garlic mayo. Enjoy!

Visit us at the Croghan Street Fair!

Hello and Happy Tuesday!

We have a super exciting announcement to make on the blog today! Around a month ago I was going through my Facebook feed and I stumbled across a page that was named, “Croghan Street Fair”. This immediately caught my attention and right away I wanted to run an idea past Darrell, I thought it would be great for Miller’s Meat Market to attend the fair as a vendor and participate in this local event, and he agreed! We think this is a wonderful opportunity to interact with our customers, and hopefully bring in more business from different areas. Our goal would be to attend events similar to this one in the future, but a little further away from home. We love meeting new people, and we are hoping to continue to reach new groups of clientele in other territories surrounding Lewis County. Croghan is a great place to see how attending events like these will go for us! We are very excited, and we’d love for you to pay us a visit on Thursday, July 29th in Croghan!

We plan to bring a number of our bestselling products with us on Thursday, so that you can purchase your favorite items right there! Some of those items will include our snack meat favorites like ring bologna, double smoked pepperoni, jalapeno & cheese bologna, pepperjack bologna, summer sausage, and old style summer sausage. We will be bringing along hotdogs, brats, and smoked bunners so you can stock up on grilling items for the weekend! Other possible items we may have would be bacon, maple bacon, kielbasa, andMoser sausage. Besides products like these, we will also be bringing along some containers of our Watson Sand and our Jerked Dry Brine so you can stock up on seasoning for all your summer barbeques.

If you are looking for a light snack at some point in your day, come and see us! We will be sampling our snack sticks and ch’arki so you can try all our new flavors! We will have all flavors of ch’arki and slims available to purchase at our table along with the other items I named. You will have to come and check us out if you want to see what other items we will have out for you to try! If you are feeling thirsty, stop by and purchase some lemonade or sweet tea to keep you hydrated!

We will be attending the street fair with our new refrigerated van, so that we can bring you fresh delicious products. This also means we will have room to bring along any pre-placed orders! If Croghan is a little bit closer to home for you, then place an order for pick up on Thursday at the street fair! You can place an order for anything from meat packages to baked goods. Send us a Facebook message to place an order for pick up in Croghan, or give the store a call at (315) 376-6253 extension 1. We will not have any fresh meat with us available for purchase so if these are items you need in your freezer, pre-order and we can bring it right to the fair with us for you to pick up!
